Research and developing prospects of traditional fermentative food-Jiangshui

According to the study of traditional fermented vegetables and the current production of China's status of the northwest fermented food - Jiangshui,microbial flora and existing problems were analyzed .In this paper,we analyzed the status of productions and quality problems of Jiangshui and expected to made a theoretical basis of production.
