A study was undertaken to ascertain the effect that the variation on working capacity has on oil yields and on the properties of oils and by-products obtained in olive oil extraction using the two-phases centrifugal decanter. The results indicate that oil yields are higher when the working capacity is 70-80% of the maximum suggested by builder company. This is also confirmed by the oil content values of by-products. To obtain these results it is important to prepare the olive paste during the mixing operation and to add a right quantity of water to dilute the olive paste. The olive oil quality is not modified varying the olive paste working capacity of centrifugal decanter; the natural antioxidant content of oils only raises when the loading capacity is increased.
