A comparative study of ionic equilibrium of different pectin from apple, citrus and sunflower have been studied in water solution at different pH by conductivity method. From the specific conductivity (ϰ) data there the value of equivalent conductivity (λ, λ ∞ ), dissociation degree (α= λ/λ ∞ ), function (K c ) and dissociation constant were studied.
