Study and control of food allergens: evaluation and development of a confirmatory biomolecular method

The study granted by the Italian Ministry of health was aimed to develop an allergen confirmatory PCR-Real Time method, single and unique at national and international level that can be reliable, accurate and reproducible, but also simple and fast, and can ensure uniformity of controls. The objective was also to identify the possibility of quantifying allergens. Four of the major emerging allergens, two vegetables, soy and peanut, and two animals, crustacean and fish, were selected. The results lead to some interesting considerations that should be more extensively investigated
