Alum-free potato powder and production method thereof

The invention discloses an alum-free potato powder prepared from the following raw materials in parts by weight: 40-60 parts of potato starch, 30-40 parts of tapioca starch, 10-25 parts of corn starch, 55-65 parts of water, 0.5-1.0 part of table salt, 0.5-1.0 part of xanthan gum, 0.10-0.30 part of konjac gum, 0.10-0.30 part of sodium alginate, and 0.10-0.30 part of citric acid. A production method of the alum-free potato powder comprises the following steps: (1) rinsing to obtain a starchy sauce; (2) adjusting to prepare dough; (3) standing and proofing; (4) extruding into strips; and (5) quick-freezing and packaging. Compared with the prior art, the prepared potato powder product is more solid, smooth in surface and not sticky, does not break, is clear in soup, has the water retention increased significantly after being frozen, and has the overall quality greatly enhanced.
