The invention discloses a mining optical fiber temperature sensor probe which comprises a temperature sensing area shell, an optical fiber and an anchor head, wherein one end of the temperature sensing area shell is provided with an opening; a fiber bragg grating (FBG) is arranged in the temperature sensing area shell; the optical fiber is connected with the FBG; the anchor head is sleeved outside the optical fiber and is fixedly connected with the temperature sensing area shell; the other end of the anchor head is fixedly connected with the head of a coil pipe; and the coil pipe can be freely bent and cannot be twisted. The mining optical fiber temperature sensor probe can be applied to measuring the temperature of the inner part of a coal mine, particularly deep rock. According to the probe, the FBG is adopted as a temperature sensing element, the coil pipe is adopted as a protecting pipe, and the anchor head which is provided with bulging thorns and is used for fixing the tail end of a temperature sensing area, and an expansion device used for fixing the tail part of a sensor and a coal seam are designed. The mining optical fiber temperature sensor probe has a simple and reliable structure, is convenient to carry and mount under a mine, and is convenient to use.
