Summary In this third edition of the Food Safety and Security Symposium “breaking barriers” was the chosen theme. This option had a double meaning: in the first instance meant the desire to overcome state frontiers and make an event of the Rio Grande do Sul Regional Section in the neighbor state of Santa Catarina, with the objective of promoting Santa Catarina’s Office into a Regional Section of the sbCTA. Secondly, the wish to go beyond the classical interdisciplinary approach that characterizes the Food Safety and Security Symposium discussing issues that have really broken traditional barriers. As such, the Symposium started debating Innovative food products and functions, instead of those conventionally associated with the purpose of feeding humans. Following, under the theme of technologies for health, new food production processes searching for the promotion of human health were discussed. Next, national programs and policies concerning recent achievements for the social development of the country were presented in the topic of Social Cultures and Policies, and, at last, Quality Assurance with a focus on food safety and security, as the main concern of the event.
