Electrical techniques can be used in broad range of applications (microorganisms and sample types) – for example, for activity of starters, presence of antimicrobial substances, phage infections, contamination, or shelf life prediction. Requirements for impedance media, instrumentation, techniques, and interpretation of results are described. Advantages and limitations of electrical techniques like versatility, speed, capacity, or costs are discussed.
