A composition for sustained release of additives in a fermentation fluid, with comprising, in tablet form, an agent of gel formation or gelling, at least one additive, and a binder, wherein the agent gelation and the binder are present in amounts effective to allow substantial release of at least one additive in the fermentation fluid for a period of at least 12 hours and up to 96 hours, and wherein the at least one additive comprises diammonium phosphate in an amount between 35 and 75% by weight of the composition, for use in reducing stuck and slow fermentation.
