The invention relates to a bean sprouts juice of chick-pea and preparation method and use. The raw material of bean sprouts juice is obtained by naturally germinating the seed of the chick-pea and then juicing. And then the bean sprouts juice is produced after clarifying; condensing; ultrafiltering; adding adjuvant and antiseptic, fruit acid and water; sterilizing; pouring; sterilizing. The seed of the chick-pea after germinating is rich in isoflavone, saponin and the like with a great variety of biological activities. The carbohydrate and protein have remarkably inhibition of protein tyrosine phosphatase, alpha-glucosaminidase and protein non enzymatic glycosylation and activating effects to peroxisome proliferators-activated receptor gamma PPAR gamma under the action of self-amylase, protease. The bean sprouts juice of chick-pea is suitable for all classes of diabete patient, especially for the elderly with fine taste special flavor and rich nutrition.
