Steeping Time and Temperature on the Content of the Main Flavanols in Green Tea

Tea is consumed in every part of the world. The traditions of infusion procedures differ widely: from single infusion of ready-to-use tea bags to ceremonies with multiple extractions according to ancient lore. Within these techniques, conditions such as water temperature or steeping time may be varied. Consequently, the concentration of the flavan-3-ols and hence their ingested amounts by consumers are hard to estimate. This is a relevant concern in epidemiological studies, when the consumed doses of flavan-3-ols by collectives are estimated using database entries.
