Modelling milk droplet drying using a reaction engineering approach

The reaction engineering approach (REA) to modelling the small droplet drying behaviour has been proposed by the first author as an alternative to the characteristic drying rate curve (CDRC) method. A comprehensive set of the laboratory results on isothermal drying of milk droplets is now available to benchmark the two models. In order to obtain an accurate comparison, desorption isotherms of milks have been measured accurately. All these have allowed a sensible comparison between the two models and certain aspects about these two models are discussed in this paper.
