La innovación social y seguridad alimentaria como base del desarrollo del producto gastronómico

En este documento se hace un analisis desde la innovacion social sobre la creacion de productos gastronomicos que fortalezcan la seguridad alimentaria. Se comienza dando del significado de la innovacion social y su aplicacion al sector turistico, especialmente en el desarrollo de productos turisticos gastronomicos, para fortalecer la seguridad alimentaria. De esta manera, tomando como ejemplo la ciudad de Cartagena, capital del departamento de Bolivar, se propone aprovechar la abundancia de los recursos agropecuarios que estan presentes a lo largo de todo departamento, asi como las fortalezas turisticas de la ciudad. Todo esto con el fin de poder desarrollar un producto gastronomico que ayude a solucionar los problemas sociales, especialmente en los sectores poblacionales donde estos se desarrollen, para asi fortalecer la seguridad alimentaria de la ciudad y, por ende, de todo el departamento. It begins by talking about the meaning of social innovation and its application to the tourist industry, especially the development of tourist gastronomic products, strengthening the food security. This way, taking the city of Cartagena as an example, capital of the province of Bolivar, it is proposed to take advantage of the abundance of agricultural resources present throughout this zone, as well as the touristic strengths of the city. All this, with the main purpose developing a gastronomic product that helps solve the social problems, especially in sectors of the population where these are engaged, and thus bolstering food security in the city, and subsequently the entire province's.
