The aim of hygienic practices in slaughterhouses is to obtain the less microbial contaminated carcasses as possible. Nevertheless we have observed that slaughter halls in bullrings don't show the required conditions for slaughterhouses, so that fought and dead animals cannot be processed with the suitable and common hygienic measures in this kind of installations. This is reason of our research, in which we have analysed and evaluated the differences between the contamination of processed carcasses in both sorts of installations.
