Estudio comparativo agronómico y nutricional de dos especies de amarantos

The agronomic yield, nutrients and sterile material biological value of experimentally cultivated Amaranthus dubius Martius ex Thellung (Ad) were studied. Clippings at the age of 40 days were evaluated and compared with Amaranthus hypochondriacus (Ah), studied by other authors. Results indicated that the green matter yield (27080 kg ha - 1 ) of Amaranthus dubius was higher than that reported for Amaranthus hypochondriacus (6530 kg ha - 1 ). The protein content of Amaranthus dubius at this stage (22.12 g%) was similar to that informed for Amaranthus hypochondriacus (22.70 g%). The percent of total dietary fiber (TDF), all as insoluble dietary fiber (IDF) was 40.48 g%, with no content of soluble dietary fiber, which increases the value of Amaranthus dubius as a nutriceutical. The protein quality value 83 also indicated that the biological value of the species here studied is adequate.
