CHAPTER 27:Carnosine Protection Against Liver Injury

The role of carnosine in ameliorating liver injury has gained a great deal of interest recently. Although its use in humans is limited due to the presence of serum carnosinase, the efficiency of carnosine supplementation in liver diseases has been investigated in various animal models including ischemia–reperfusion, acetaminophen, thioacetamide, cadmium intoxication, sepsis, alcohol and nonalcoholic fatty liver. Its beneficial and protective actions as an antioxidative, anti-inflammatory, antiapoptotic, antifibrolitic and antiglycating agent are well established.
