Study of Solid-state Fermentation by Monascus anka for Yellow Pigment Production

Effects of ammonium chloride,temperature,inoculum size and filling quantity on the solid-state fermentation by Monascus anka mutatnt MYM2 were studied for yellow pigment production.The optimal fermentation conditions were shown as follows:initial water content 55%,filling quantity of indica rice 18g/250mL in erlenmeyer flask,NH4Cl content 0.2mmol/g,initial pH 6.0,inoculum size 10%,temperature 30℃,and fermentation time 240h.After five repeated trials under those conditions,the average yield of yellow pigment was 665.78 U/g,the average color tone was 4.33,and no citrinin was detected in the product by HPLC.
