Due to the BSE-crisis the discussion concerning the processing of mechanically separated meat (MSM) gains actuality and intensity. Because bones with attached meat are the source material, it is plausible that the presence of bone particles acts as an indicator for the addition of MSM to meat products. In the 2th communication mainly the literature dealing with the detection and quantitative determination of bone tissue by histological techniques is reviewed. Fail positive diagnosis may result from bone particles which originate from sawing the carcass or manually deboning. On the other hand the addition of MSM with low bone content is hardly to be detected in meat products because there exists no zero-tolerance.
