Calidad microbiologica de los productos de la pesca (conservas, semiconservas y salazones) elaborados y comercializados en la comunidad autonoma del Pais Vasco

A study has been carried out to analyse the microbiological quality of fish products in different places of Basque Country. A total of 33 samples were taken from fish factories in 1997 by the Basque Country Public Health Services. From the total of the samples. 13 were canned fishes, 4 tinned anchovies and 11 salted fishes. They were tested for Aerobic sporulated bacteria, aerobic mesophilic bacteria at 30 °C, anaerobic mesophilic sporulated bacteria. Bacillus cereus, C. botulinum, C. perfringens, Enterobacteriaceae at 30 °C, Staphylococcus aureus and Salmonella-Shigella. The results were correct and in a high level of concordance with spanish legal rules.
