A device (1) is used for producing particles of a food having a fat content of at least 50%, a sugar content not exceeding 20% ​​and a water content of at most 10%. The present food in liquid form is applied in the form of a film or in the form of strips by means of a metering device (2) on a moved surface of a cooling device (5), with which the food is at least partially curable. In order to enable an economically efficient manner the production of particles under clean room conditions, it is suggested that the metering device (2) has a constantly open passage cross-section and an elastically deformable membrane (15) having a surface with the liquid, sterilized or pasteurized food in contact. The membrane (15) is approximately perpendicular reversibly deflected in a direction perpendicular to its plane, whereby the volume of a conveying space for the food can be changed. Furthermore, the metering device (2) and the cooling device (5) is sealed, placed in an enclosed, in the interior (24) sterilizable or pasteurizable container (7).
