In recent years, a growth interest has shown to donkeys’ milk. It sources from its main nutritional and functional features, as well as taking part in the diet of patients affected by cow’s milk protein allergy. It shows similarities to human milk especially in respect to lipid and protein composition. Low levels of protein and inorganic substances, bring donkeys’ milk high digestibility and low renal load. Accordingly, when breast feeding is inadequate or after weaning, it can be a good alternative using donkeys’ milk in nourishment of newborn babies or childrens. Its biological functions are also due to a high concentration of polyunsaturated fatty acids, low cholesterol content and high levels of vitamins A, B and C. The good balance between casein and whey proteins, rich in essential nutrients and palatability make donkeys’ milk suitable for the nutrition of children, elderly and convalescent. Besides all of these, with the high level of lysozyme and lactoferrin, it has an antimicrobial activity. It is helpful in the treatment of human immune-related diseases and in the prevention of atherosclerosis.
