Pullulan,a kind of exopolysaccharides produced by Aureobasidium pullulans,has a number of favorable properties such as nontoxicity,low viscosity,high plasticity,good film-forming etc.,and is widely used in food,pharmaceutical,chemical industry,petrochemistry,light industry and other manufacture industries.This article is mainly introducing its structure,properties and biosynthesis,also discussing its production and its application in food manufacture industry.
