Assessment the quality interior of the egg (Haugh Unit and albumen index) is very important becausethe value of Haugh Unit and indeks albumen reflect the quality of eggs that is generally donedestructively. This research is expected to be used as basic information for develop fast and objectivenondestructive test in the assessment of the quality interior of commercial egg using ultrasonic waves.This study reports the results of measurement of attenuation parameters and ultrasonic wavepropagation that is propagated on the albumen. An 1 MHz ultrasonic wave was generated continuouslyby a transmitter transducer and propagated through albumen in a test-cell and accepted by a recipientof the transducer which is placed facing each other. Commercial Eggs are observed with 30 eggs eachat the age of 1 day and 14 days. Attenuation is calculated by comparing the amplitude of the ultrasonicwave of the receiver with the transmitter. Velocity is measured by distance divided by travel timepassing through albumen. Based on the results of the analysis, it can be concluded that the Haugh Unitand Albumen Index of commercial eggs can be determined by looking for attenuation values andpropagation speeds. The Value of attenuation and propagation tends to decrease with increasing ageof eggs.
