The fungistatic effect on formation and rheological parameters of the adsorption layers of latex emulsifying surfactants at the aqueous solution-air interface

The effect of a fungistatic (sodium dehydroacetate) on the colloidal parameters of aqueous solutions of two anionic surfactants (potassium oleate and sodium alkylmonosulfonate E-30) emulsifying food latexes is studied. Both in diluted (below CMC) or highly concentrated (C surf >> CMC) systems, a fungistatic significantly affects the parameters of emulsifier adsorption at the aqueous solution/air interface and the structure of forming adsorption layers. In the case of highly concentrated solutions of emulsifying surfactants, this effect results, in particular, in a significant increase in the strength of the adsorption layers. The obtained results indicate that a fungistatic additive enables one to increase the stability of latex systems stabilized with the adsorption layers of emulsifying surfactants. The concentration range of components providing the maximum effect is revealed.
