Studies have been conducted to create an improved and waste-free technology for obtaining oxidation-resistant food beet pectin from its extracts for the medical and pharmaceutical industries, as well as the production of bakery and confectionery products, jelly marmalade and dietary foods, which reduced Optimized conditions for extraction of pectin from beet pulp due to the use of weak solutions of hydrochloric acid (0.3%) or cheap citric acid in small concentrations obtained by processing lemons into juices, using a hydraulic module in the first stage of acid extraction 1:20, in the second 1:10, as well as for the separation of pectin used distilled ethyl alcohol (concentrations of 90% and 70%), which allowed to obtain pectin with a yield of up to 30%. The proposed conditions for obtaining pectin concentrate avoided the creation of an aggressive environment and preserve the physicochemical properties of pectin compounds. After the first acid extraction, the yield of pectin compounds with a molecular weight of 280,000 was in the amount of 19 - 23% of the dry matter of beet pulp, after the second - 7.5% with a molecular weight of 25,000, and 15% of cellulose after purification of cellulose from pectin residues, hemicellulose, residual lignin and lipids by alkaline extraction. On the basis of the improved technology of receiving pectin compounds the technological scheme of production of pectin concentrate is offered. The obtained high molecular weight pectin substances after I-extraction can be used in the food industry as a thickener and structurant. Low molecular weight pectin substances of II-extraction are recommended for use in the pharmaceutical industry as biologically active substances. The obtained purified cellulose can be used for the manufacture of packaging material, obtaining microcrystalline, nanofibrillary and nanocrystalline cellulose fibers. It is shown that non-recyclable pectin extraction waste is used for biofuels or for technological needs in the production of medical materials.The proposed advanced technology for producing pectin in comparison with known technologies is waste-free and environmentally friendly.
