The invention discloses a processing method for quickly-frozen cassava blocks. The processing method is characterized by comprising the following steps: step 1, selecting fresh and ripe edible type cassava tuber roots; washing and peeling off; step 2, splitting the cassava tuber roots in a half-and-half manner and removing central fibers of cassavas; dicing the cassava tuber roots into small blocks; step 3, putting the small cassava blocks into hot water to be scalded; step 4, rapidly cooling the scalded small cassava blocks to be lower than 10 DEG C with cooling water; leaching surface water and putting the small cassava blocks into a refrigerator to be quickly frozen to rapidly freeze the small cassava blocks until the central temperature of the small cassava blocks is lower than -10 DEG C within 20 minutes; step 5, packaging the quickly-frozen small cassava blocks into a bag in vacuum and storing at temperature ranging from -5 DEG C to -10 DEG C. The processing method is low in cost, high in economic benefits and long in fresh-keeping time; the quickly-frozen cassava blocks are convenient to transport, store, sell and cook, can keep the bright flesh color of the cassavas and are safe to eat.
