The invention relates to a method for measuring the laccase activity in must by the syringaldazine method, wherein a wort is withdrawn dose, it is clarified, it is injected under pressure through a resin capable of adsorbing anthocyans and tannins, there is provided a sample of the must, syringaldazine and buffer solution, and is carried out of the sample color measurements from which one determines the laccase activity. Moreover, in parallel there is provided a sample comprising the must and iodine solution is checked for the presence of sulfur dioxide in the sample, and outputs an inhibition signal of the measurement of laccase activity if the rate dioxide free sulfur is greater than a predetermined threshold.
