Conclusions and Implications: Ethnicity and the paraprofessional have a considerable effect on positive behavior change of EFNEP participants. These findings support the need to develop materials and lesson plans that are appropriate and effective for use in multiethnic populations. Nutrition educators should collaborate to determine what methods are most successful at generating the greatest desired behavior change among their clients.
