Method for prolonging quality guarantee period of industrialized corn paste through heat sterilization

2014
The invention provides a method for prolonging the quality guarantee period of industrialized corn paste through heat sterilization. The method comprises the following steps: stirring and mixing corn flour, wheat flour and edible sodium carbonate according to a mass ratio of the corn flour to the wheat flour to the edible sodium carbonate being (66-80): (20-34): (0.5-1) so as to obtain mixed flour, and then adding the mixed flour to 80-100 DEG C water in a jacketed pan under a stirring condition so as to obtain a mixture of the mixed flour and the water, wherein the mass ratio of the mixed flour to the water is 1: (4-5); continuing to stir the mixture, and heating the jacketed pan so as to obtain the cooked paste; distributing the cooked paste to inner packaging boxes, standing still, and cooling for molding; putting the cooled and molded paste boxed in the inner packaging boxes into retort pouches, and sealing the retort pouches in vacuum; putting the paste packed in the retort pouches sealed in vacuum into a steam high-temperature water bath sterilization tank, maintaining for 20-30 minutes at the temperature of 121 DEG C, then cooling to 60-70 DEG C, and opening the sterilization tank, thus completing sterilization. The corn paste prepared by the method has the characteristics of long quality guarantee period, convenience to eat and the like.
