This study was conducted in order to investigate the effects of the whitening and antioxidant activities of Inulae flos with water using microwave assisted extraction (MAE) and pressure heating extraction (PWE). The total polyphenol and flavonoid compound contents from extracts obtained by MAE 67.75 mg/g and 26.28 mg/g, respectively were higher than in those obtained by PWE. Contents derived from PWE, however, showed the highest levels of electron donating ability activity 90.98% at a concentration of 1.0 mg/mL. As for superoxide dismutase-like activity, PWE showed the highest value 69.86% at a conditon of 1.0 mg/mL, while the activity from MAE was 27.32%. The nitrate scavenging ability of contents derived from PWE revealed their highest effects at the pH 1.2 (86.88%) and pH 3.0 (75.26%) at a concentration of 1.0 mg/mL. The tyrosinase and elastase inhibiton rates were greater in contents derived from MAE 14.81% and 15.71%, respectively. Measurements of the collagenase inhibiton rate revealed 24.09% and 24.62% in extracts obtained by MAE and PWE, respectively. These results suggested that the water soluble extract of inulae flos could be used as an antiwrinkling agent, as well as an antioxidant resource for functional foodstuff, cosmetics, and beauty industry materials.
