An experiment was conducted to determine the constituents and quality of flower essential oils of ”Shiow-ying” and introduced Spanish jasmine (Jasminum officinale, L. forms grandiflorurn, (L.) Kobuoki). The internal substances of different flower parts were extracted by n-hexane and afterward independently measured by spectrometry and demonstrated that the essential oil largely exists in petals, whereas the pigments of absolute originate from pollen. The relationship between Spanish jasmine and ”Shiow-ying” was discussed on the basis of the constituents of flower essential oils which were analyzed by gas chromatography. The yield and constituents of flower essential oil of Spanish jasmine varied with different extraction methods. Besides the quality of different absolutes of jasmine was evaluated, the possible biosynthetic pathways of flower essential oil of Spanish jasmine were also briefly discussed.
