Research on Effect of Pectinase in Clarification Process of Prunus americana Juice

Objective To approach the optimum clarification parameter of Prunus americana juice.Methods The clarification process of Prunus americana juice was studied through single factor and orthogonal test.Results The optimum clarification parameter was that dealing Prunus americana with 0.03 % pectinase at 55 ℃ for 2.0 hour.The transmittance of Prunus americana juice was 94.2 % and the tannin content was 0.327 mg/mL.Conclusion The results can provide the reference for the production and processing of Prunus americana juice.
