The synergy studies of sophora bean gum with xanthan gum

The synergy of sophora bean gum with xanthan gum was studied in this paper.The results showed:the synergistic of sophora bean gum with xanthan gum was high,and the best match of them was 2∶8,when the concentration of mixture reached to 0.5%~0.6%,gel was formed.So sophora bean gum could be a thickening and gelling agent.
