Study on Stability of Procyanidin from Peanut Red Skin

The stability of procyanidin(OPC) extracted from peanut red skin was investigated in this paper.The results showed that the λmax of OPC was 280 nm and it showed high light stability and thermal stability(≤75 ℃).Besides,it was stable in acidic and neutral medium.It was insensitive to most tested metal ions except Fe~(3+).
