The invention relates to a quick-frozen minced fillet product quality improver as well as a preparation method and an application method thereof. The quick-frozen minced fillet product quality improver is prepared from the following components by weight percent: 0.5% to 2.0% of lysine, 0.1% to 0.3% of Epsilon-polylysine, 5% to 10% of sodium alginate and 89.5% to 94.4% of deionized water, wherein the optimal weight percent of the components is as follows: 1.16% of lysine, 0.17% of Epsilon-polylysine, 8.67% of sodium alginate and 90% of deionized water. The preparation method comprises the following steps: dissolving the lysine and the Epsilon-polylysine in the deionized water; slowly adding the sodium alginate while stirring until the sodium alginate is completely dissolved; homogenizing at high speed so as to ensure that the lysine, the Epsilon-polylysine and the sodium alginate are in a physical blending state; and standing overnight so as to obtain the quick-frozen minced fillet product quality improver which can be used. The application method comprises the following steps: adding 15 to 20 parts of quick-frozen minced fillet product quality improver into a minced fillet product slurry at the existence of composite phosphates, blending, forming, gelling at specific temperature, aging, cooling and quick-freezing so as to obtain a quick-frozen minced fillet product.
