In Extremadura, dried figs are slightly covered with flour and packed in plastic film for commercialisatino. The use of edible coatings avoids water losses and improves the fruit appearance. This treatment, joined to modified atmosphere packaging, allows keeping sensory characteristics of dried figs for longer time, mainly texture that is an important quality parameter in dried fruits. In this paper it is proposed the use of an edible lipid coating and a nitrogen atmosphere packaging as an altetnative to traditional dried figs commercialisation. Moreover, it is studied the shelf-life of this new product.
