Perspective on the transformation of carbohydrates under green and sustainable reaction conditions

Abstract A review on the transformation of carbohydrates into various types of compounds under green and sustainable reaction conditions is presented. This chapter is broadly divided into two parts. The first part compiles several reports on the chemical transformation of carbohydrates in green solvents, such as water, room temperature ionic liquids (RTILs), supercritical fluids (SCFs), deep eutectic solvents (DESs), and fluorous solvents. The second part presents a wide variety of reaction conditions supported by modern technologies, which include synthesis of oligosaccharides and functional group transformations in carbohydrates under microwave irradiation, ball milling, ultrasonication, and photoinduced, electrochemical, and high pressure conditions.
