Thermal resistance of Listeria monocytogenes in foods

Abstract Recent studies on the heat resistance of Listeria monocytogenes in dairy products, the discrepancies in results and some of the difficulties involved in comparing interlaboratory experiments are reviewed. In addition, some current work on the thermal resistance of the organism in meat products is discussed.
