MULTIFUNTIONAL BIOLOGICALLY ACTIVE ADDITIVE FOR DAIRY PRODUCTS The effect of different concentrations of lysozyme and lactoferrin on probiotic cultures of different taxonomic groups is shown. On the basis of the research the composition of multifunctional biologically active additive for the enrichment of dairy products has been substantiated. It includes probiotic cultures, lysozyme and lactoferrin.
