On the basis of the unique production techniques of Maotai-flavor liquor in Maotai region,the relations between key production tech-niques of Maotai-flavor Daqu and its quality and styles were analyzed from the aspects including high-temperature starter-making,high-tempera-ture stacking,high-temperature pits fermenation,high-temperature slow liquor distilling,and long-term storeage etc.
