Исследование химического состава и технологических свойств современных коптильных препаратов

Physical and chemical properties of industrial smoking preparations as "VNIRO", "Liquid smoke", "Scansmoke PB 2110", "Scansmoke PB 1145", "Smoke EZ Supreme Poly C", and "Smoke EZ PN 9" are tested. Significant difference of solid residue content is found: it varied from 0.2 to 49.9 %. Content of the basic smoking components varied in the limits: phenols from 1.48 to 13.25 %, organic acids from 2.30 to 17.45 %, carbonil compounds from 0.53 to 24.81 %. Chemical agents of their ether-soluble fractions are identified by gas-liquid chromatography for understanding the role of smoking components in formation of smoked products specific properties. General indices of fragrance are calculated for phenolic fractions of the smoking preparations on the basis of sensory smell evaluation and results of chemical agents identification.
