Synthesis of N-[α-D-glucopyranosyloxy)-3-methyoxybenzyl]nonamide and its β-anomer

New capsaicinoid glucosides [α- and β-anomers of N-[(4-(D-glucopyranosyloxy)-3-methoxybenzyl]-nonanamide (α- and β-1)] were synthesized from N-vanillylnonanamide (2). The pungencies of α-1 (threeshold value (T=0.13 ppm] and β-1 (T=0.24 ppm) tend to be produced more slowly and are weaker than those of 2 (T=0.054 ppm)
