Dressing and Cooking Losses, Juiciness and Fat Content of Poultry Fed Cereal Grains. Part 2. Broilers

Abstract THE use of single cereal grains as turkey rations has been reported by Goertz et al. (1961). Maw (1939) fed broilers cereal grains and noted that those fed corn, wheat, or barley were superior to those fed oats; also that more fat was deposited in poultry fed corn than in those fed other cereal grains. In earlier work with roasters, Maw et al. (1936) noted that higher moisture losses were associated with smaller quantities of fat in the carcass. Arscott and Sather (1958) studied broilers fed corn or corn and barley with or without animal fat. However, work has not been reported on dressing, thawing, and cooking losses of broilers fed mainly the single cereal grains.
