Firstly,this paper introduces the principles and methods of identifying liquor-making microbe with polymerase chain reaction(PCR),a cutting-edge technology of molecular biology,and gel electrophoresis technology.And then this paper reviews and prospects the application of molecular biology on the identification of microorganisms,pointing out that the molecular biology techniques will be the key development direction of liquor-making microbe identification.
