Etude comparative des caractéristiques morpho-métriques et Biochimiques des dattes commercialisées dans le marché régional de FES / MAROC ( Comparative study of the morpho-metric and Biochemical dates caractere solding in the regional market of FES / MOROCCO )

This study is focused on biochemical and characterization of thirteen varieties of dates fruits sold in "Fez city date wholesale" in Morocco. Varieties are divided into ten Moroccan varieties "Abourar, Boufeggous, Bouskri, Bouslikhene, Jihel, Khalt, Klane, Mejhoul, Rassltmer and Tarzawa", and three imported varieties "Deglet Baida, Deglet Nour and Lulu". The results show morphological and physic-chemical differences between the studied varieties, especially in color, texture, size and weight criteria of dates. Varieties that validate all quality criteria are Mejhoul and Jihel, which have best characters that give them, appreciated aesthetic appearance.
