The invention relates to a cooking process of a food and / or an auxiliary cooking and evaluation of the formation of newly formed compounds. According to the invention, the method comprises the following steps: - providing at least two samples (5) of raw food and / or unheated cooking auxiliary, - preset for the first of these samples at least one cooking time and a cooking protocol including, meanwhile, a cooking regulated power and / or temperature in contact with a heating surface (10) heated by a heater (3), - cooking / heating the first sample (5) according to said cooking protocol during said preset cooking time, then, - achieve: * a metering neoformed compounds contained in the first sample (5) baked, and * a metering neoformed compounds contained in the second sample (5), and - comparing the dosages them.
