The object of the work was to determine if the temperature compensation is likely to be a significant effect in commercial practice over the temperature range 2 to 7°C and therefore allow a better evaluation of the benefits or otherwise of low temperature storage. Growth and extracellular enzyme production together with acid degree values were monitored in raw milk samples of varying quality incubated at 2, 4 and 7°C
