The present invention discloses a spicy flavor oils and flavoring preparation, their oil supercritical extraction of spices vegetable oils, and glyceryl mono fatty acid esters, octyl caprate, glycerin mixed together. This flavor oil and ODO glycerin mixture was diluted with good solubility in a variety of spice extracts, tingling enables rapid release, synchronized release purposes spicy taste, but can effectively improve the flavor oil heat resistance; monoglycerol fatty acid ester as emulsifier, oil dispersion more uniform, to improve the stability of the mixed oil. This flavor oil has a strong taste, aroma, etc., and two kinds of spicy taste can be synchronized release; has good heat resistance characteristics, ease of product application, the concentration can be adjusted as needed to facilitate the use of large-scale food processing industry; especially for in the spicy flavor of pickles, mustard, seaweed vegetables, assorted vegetables, pickles, mustard silk, mushroom and other salted, pickled vegetables processing industry.
