The present invention relates to a novel microorganism source neutral protease and its use in the preparation of casein phosphopeptide. Separated by solid fermentation of Aspergillus oryzae neutral protease product was purified to obtain a molecular weight of approximately 58kD, a suitable reaction pH is 7.0 to 8.0, for -Ser-His -, - Val-Glu -, - Lys-Tyr- and -Arg -Gly- other more selective peptide bond. The enzyme can produce hydrolyzed casein casein phosphopeptide, yield and purity higher than casein phosphopeptides prepared under the same conditions trypsin, reference is now provide advantageous production of casein phosphopeptides.
