Milkfat purity is presently evaluated by the triglyceride analysis performed by using the Official EU method. This note was written to provide useful suggestions to the laboratories which are going to apply this method. Information about the field of application and the optimization of the operative conditions of both the gas chromatographic analysis and the peak integration was reported. Finally some reflections on the right interpretation of the data were provided.
